The most delicious vegan breakfast pancakes with chickpeas. Egg-free omelette. How can this be possible? Well.. Usually I don’t buy eggs, but I just looove a good omelette so that’s often a hard decision.
All you need to make these is chickpea flour, chili, chives, lemon, salt and pepper, and some water. Which you whisk up and then cook in a small frying pan for a couple of minutes.
Not quiet the same as a traditional omelette, they have a different taste and texture. But taste with your own favorite spices and ingredients and you’ll have your new favourite morning or supper. They take about five minutes to make, need just a few ingredients and taste amazing.

Egg-free Omelette with Chickpeas
Egg-free Omelette ala Vegan Chickpea pancakes. The perfect breakfast meal or supper with no eggs used. Find the full vegan recipe here.
Ingredients
- 150g chickpea flour
- 200 ml. water
- 3/4 teaspoon curry (or turmeric)
- 1 teaspoon chilli (can be omitted)
- fresh chives
- juice from 1 lemon
- Salt and pepper
- Oil or plant butter for frying
Instructions
Place the chickpea flour into a bowl and add the water, whisking in until the mix is smooth and you see small bubbles on the surface. Stir in the chilli, chives, curry, lemon juice, salt and pepper and give it a final whisk. Add some fresh chives, taste the dough and add more spices if needed.
Heat some olive oil or butter in a small pan (mine is 20cm) and once the pan is hot pour some in the mix like a circle. Let it cook for 3 minutes. Then flip the pancake and let it cook for another 2 minutes. Continue with rest of the mix. Drizzle with some salt or pepper if needed.
Serve the pancakes/omelette with toppings: avocado, radishes, tomatoes, pesto and fresh chives.
Just some of the few ingrediens you’ll need: Chickpea flour, curry, chili, tomatoes, fresh chives, lemon, salt and pepper. If you don’t have any curry, don’t stress, turmeric works perfectly too.
Chickpea flour does have a little yellow color in it, but adding a tiny spoon of curry, just makes the color more strong and gives the omelette such a good taste. I served my omelette pancakes with avocado, tomatoes, radishes, fresh chives and this → delicious homemade spanish Romesco Pesto.
So tasty and so easy to make. If you make the pancakes thinner you can also wrap them and use like pitas, tacos etc. I also got very inspired to serve them like Choosing Chia did here. Flip them over like a half omelette filled with all your favorite vegetables and herbs inside.
