Creamy Pasta Penne with pesto and lemon. VERY simple to make and is one of my favorite go-to dinners on busy workdays. However, it’s still full of delicious taste. You can make big batches of this, save for later (dinner during the week or lunch boxes). This recipe is ready in only 10 minutes.
As I said, this is my new favourite quick supper. And have been it for years now. It’s filled with flavour thanks to the sautéed onion and garlic, and the mix of tomatoes and basil, plus a squeeze of lemon juice. All mixed together and serve simple and fresh. Furthermore, you can add any vegetables you want.
Just love stirring a few vegetabels into pasta dishes. It’s an easy way to get more vegs in and the pop of red and greens looks so delicious too. Furthermore, it’s also a week savor on busy days and you only got 10 minute for a tasty dinner. Add all the ingredients you’d like and top with some chili, paprika, cumin or other favorites for extra tastiness.
For this recipe I also made my favorite spinach pesto to the dish drizzled on top of the pasta. It turned out so good and creamy so it’s worth giving that a try.

Creamy Pasta Penne – In 10 minutes:
Creamy Pasta – my new favourite quick supper. Simple pasta recipe with a squeeze of lemon juice. Healthy and made in only 10 minutes.
Ingredients
- 1,5 cup pasta penne (for 1 person)
- 1 stem of Spring Onion
- 1 clove of Garlic
- 1 handful of Tomatoes
- Juice from 1/5 Lemon
- 1/2 teaspoon Turmeric
- 3 tablespoon Soy Cream
- 1/2 cup of water
- Salt and pepper
- Fresh basil
Instructions
Cook your pastas al dente, cook for 7-8 minutes at high heat.
While the pastas are cooking, place your onions and garlic in a large pan and drizzle with olive oil. Fry for 5 minutes until golden. Adding in the cherry tomatoes, spring onions, lemon, a little turmeric and soy cream, frying for 5 more minutes. Taste with salt and pepper.
Once everything is cooked, drain your pasta and stir through your tomato and lemon cream. Taste with extra lemon, salt and pepper and serve with fresh basil and green pesto on top.
Tips for pasta decoration:
Top with fresh basil on top of the creamy pasta penne for more flavour. Decorating with fresh herbs, salt, pepper and spices always makes a simple pasta salad like this to the next level. And even boring weekday meals turns out pretty and tasty for the eyes.
You can skip the lemon and soy creme fraiche if you like. I just love the extra sourness on top of the thick pastas. For example, add a little more lemon into your green pesto on top, and this works pretty great too. As a result, you’ll get a tasty recipe as well.
