In this Cauliflower Hot Wings recipe, the cauliflower florets are made with a batter of buckwheat flour and covered in a tasty soy sauce/ glaze – and sprinkled with sesame seeds.

For all you cauliflower lovers that already eaten your own weight of cauliflower pizzas, cauliflower salads and Indian dahls. Here is a new one for you to try. And gluten-free too.

When I made this buffalo cauliflower hot wings recipe I didn’t thought the recipe would be this great. But when I took out the tray with golden crusted cauliflower bouquets from the oven, they did actually look pretty good. The crust was firm and tasty and when you bite into it the cauliflower inside almost melts with softness.

Because I wanted to keep these cauliflower hot wings vegan, I used the ‘Soya Cusine’ from @Naturli’ instead of conventional milk/cream to bind and it worked perfectly. It holds the cauliflower firmly in place and taste like heaven.

Cauliflower Hot Wings

My best recipe for cauliflower hot wings. Vegan buffalo recipe made with barbecue, soy sauce / glaze. Eat with rice, salads or just enjoy as they are.

Ingredients

  • 500g cauliflower
  • 1 cup of buckwheat flour
  • 1 cup of soy cream (I used Naturli’ soy cuisine)
  • 1 teaspoon of paprika
  • Salt & pepper
  • Sauce/Glaze:
  • 1 teaspoon corn starch mixed with 1 tablespoon of water
  • 2 tablespoon of maple syrup
  • juice from 1 lime or half lemon
  • 1 tablespoon ketchup
  • 3 tablespoon of soy sauce
  • 2 tablespoon of oil
  • 1 teaspoon barbecue spice

Instructions

Preheat the oven at 200c (390f). Wash the cauliflower and chop in small bouquets.

Start to make the batter: Mix buckwheat flour, soy cream, paprika and a gently amount of salt and pepper (the dough needs to be thick). Add the cauliflower bouquets in the mixing and on a baking tray with baking paper. The bouquets needs to be in a thick layer. Cook in the oven in 15 min.

In the meantime make the soy sauce/glaze. Start by mixing corn starch with water. Mix well and add maple syrup, lime juice, ketchup, soy sauce, oil and barbecue spice. Set aside.

Take out the cooked hot wings from the oven and add directly on a pan. Add the soy sauce/glaze on top and cook in 4-5 minutes. Mix well until golden and warm. Drizzle with sesame seeds and serve warm with rice, nudel salat – or just plain.

⟶ On top you can see how I made mine. First, I washed the cauliflower and chopped them in small bouquets. Then I made the batter (picture 1). As you can see the dough needs to be quite thick. Add the cauliflower bouquets in the mixing and on a baking tray with baking paper. The bouquets needs to be in a thick layer. Cook in the oven in 15 min.

Afterwards, take out the cooked hot wings from the oven and add directly on a pan. Add the soy sauce/glaze on top and cook in 4-5 minutes (picture 2). The texture of the glaze is really key here. Then, mix well until golden and warm. Drizzle with sesame seeds and serve warm with rice, nudel salat – or just plain.

What to eat with the cauliflower hot wings:

You can make these as a starter snack / midday snack and serve them just plain. I imagine a sweet soy-based dip or yogurt dip would be good. But I also imagine a good rough and healthy salad would be good to this tasty and this ‘rich’ recipe. Try also to eat them in a bowl with rice or quinoa.. And maybe an Asian flavored dressing that pairs great with the cauliflower crust.
