Blueberry compote with peanut butter cream

Made this delicious and simple recipe a sunday morning. First I just wanted to eat the blueberry compote with naturel soy yogurt or make it into a smoothie. But then I mixed with peanut butter, banana and cardamom – and it turned out pretty good!

You can easily change the ingredients after wants and needs and if you have any other leftovers.
I ate this with popped quinoa, a tablespoon of peanut butter, blueberries, nuts and 2 tablespoon of homemade granola. Serving them in jars or glasses it’s also easy to store in the fridge and save for later.

Blueberry compote with peanut butter cream

Serves: 1 glass

Ingredients

  • 2 tablespoon blueberry (frozen)
  • ½ lemon juice
  • ½ teaspoon vanilla
  • 1,5 banana (normal size)
  • ½ teaspoon cardamom
  • 6 tablespoon naturel soy yogurt
  • 3 tablespoon peanut butter
  • Salt

Instructions

Mix1) Start with the blueberry compote - mix the blueberries with lemon juice and vanilla in a small blender or food processor. Set aside.

Mix 2) Then make the banana/peanut butter creme - add banana, cardamom, yogurt, peanut butter and salt in a small blender too and mix together.

Clean a glass or jar, add the white creme and top with blueberry compote. Swirl a little bit with a spoon so the mix comes together.

Decorate: with blueberries, peanut butter, nuts, granola or popped quinoa.
